Cold Cucumber Soup
Summer hot days request fresh dishes that will make you feel satisfied without making you feel heavy. That why this Cold Cucumber Soup is perfect! I found it at Simply Gluten-Free and decided to give it a try on a very hot summer day in LA. It did surpassed my expectations! Ingredients:
- 3 English or European Cucumbers (also called seedless cucumbers), peeled and chopped / 3 pepinos de salada sem sementes, descascados e picados
- 2 cloves garlic, minced / 2 dentes de alho triturados
- 2 green onions, chopped / 2 cebolinhas verdes, picadas
- 1/4 cup fresh mint leaves / 1/4 copo de folhas de hortela frescas
- Juice of 1 lemon / Suco de 1 limao
- 1/2½cup water / 1/2 copo de agua
- 1/2½ cup fat-free Greek yogurt (for vegan or dairy free use dairy free yogurt) / 1/2 copo de iogurte natural sem sabor
- 1 teaspoon kosher or fine sea salt / 1 colher cha de sal
- 1/2½teaspoon black pepper / 1/2 colher de cha pimenta preta
Instructions:
- Place the cucumbers, garlic, green onions and mint leaves in a blender or food processor and process until smooth. Add the lemon juice, water, yogurt, salt and pepper and process to combine. / Coloque pepinos, alho, cebolinha and hortela no liquidificador ou processador de alimentos e bata ate o pepino dissolver. Adicione o suco de limao, agua, iogurte, sal e pimenta e bata ate formar uma mistura homogenea.
- Chill in the refrigerator for about 1 hour or until cold. To serve right away, pour the soup into a large mixing bowl and set that bowl into a larger bowl filled with ice and water. Stir occasionally until chilled, about 10 minutes. / Deixe a sopa esfriando na geladeira por 1 hora ou ate fria o sufciente. Para servir imediatamente, coloque a sopa numa tigela em cima de uma outra maior enchida de gelo e agua. Mexa ocasionalmente ate fria por +ou- 10 min.
