Sweet Pea and Spinach Lasagna
Happy 2013! To start the new year fresh, we have a very special recipe and instead of music, a musical contest! That's right! This recipe is part of "The Script Contest". If you know the band, you know how great their music is, and if you don't, this is an awesome opportunity to get acquainted to them. I highly recommend it. This Sweet Pea and Spinach Lasagna is Danny's (the vocalist) favorite Italian food and it was slightly based on one I found at Delish.com. Ingredients:
- 1/2 package(s) (10-ounce) frozen peas
- 6 oz of spinach
- 1 container(s) (16-ounce) ricotta
- Coarse salt
- Black pepper
- 1 jar(s) (16-ounce) marinara sauce
- 1/2 jar (16-ouce) alfredo sauce
- 1 package(s) (9-ounce) no-boil lasagna noodles
- 1 cup shredded mozzarella
- Basil to decorate (optional)
Directions:
- Heat oven to 400 degrees F. Place the peas in a colander or large strainer and run under cold water until thawed; let drain. On a skillet, heat the alfredo sauce then dip the spinach in there, et it cook for 5 minutes always stirring.
- In a medium bowl, combine the ricotta, peas, and 1/4 teaspoon each salt and pepper. Spoon half the marinara and alfredo into an 8-inch square or round baking dish. Top with 2 layers of lasagna noodles (4 sheets).
- Spread half the ricotta mixture over the noodles and top with a single layer of lasagna noodles (2 sheets). Spread the spinach mxture then a mozzarella cheese layer. Repeat the process Top with 2 layers of noodles (4 sheets) and the remaining marinara.
- Sprinkle the mozzarella on top. Decorate with a few fresh basil leaves. Loosely cover with foil and bake until the noodles are tender, 45 to 50 minutes.
