Zucchini Sandwich

Hello! New day, new recipe! This Zucchini Sandwich was created by Bibiana, a friend, and I on a hungry Friday night. All flavors put together turned out to be very delectable and smooth, they will melt in your mouth. To complete this mouthful experience, music was chosen by Bibi, as we call her. Hope you give it a try!

Prep time: 10 minutes | Bake Time: 5 minutes | Total time: 15
minutes | Servings: 2 

Ingredients:
  • 2 small zucchinis sliced
  • 4oz spinach
  • 1 clove garlic
  • 1/2 small chopped onion
  • 4oz pepperoni
  • 1/2 package of mexican blend cheese shredded
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 2 whole wheat pita breads

Instructions:
  1. Pre heat oven to 350F. Meanwhile, heat olive oil in a skillet and sautee onions and garlic. Add zucchini and pepperoni and let it cook for a few minutes. Then, add spinach, salt and pepper. Once zucchinis and pepperoni are soft, it is done.
  2. To assemble the sandwiches: open bread and sprinkle a generous layer of cheese, top with zucchini mixture, and if you like add a little more cheese on top.
  3. Bake it for about 5 minutes, until cheese is melted and edges are brown. Enjoy!
